Strawberry Spinach Salad July 31, 2010

Ingredients

6 oz. spinach, cleaned

6 large strawberries,sliced

1 oz. Balsamic vinegar

2 oz. Balsamic vinaigrette

3 oz. goat cheese

1 oz. candied walnuts

1. Marinate strawberries in balsamic vinegar for just a few minutes and drain. (Do not marinate berries too long or they will become too sour and soggy.)

2. Combine strawberries, spinach and balsamic vinaigrette (see recipe below), and toss well.

3. Add goat cheese, breaking into small bits and toss lightly.

4. Place into large salad bowl and top with candied walnuts (see recipe below).

Balsamic Vinaigrette

Whisk together the following:

1 cup olive oil

1/4 cup Balsamic vinegar

1-3 cloves crushe garlic

Juice from 1 lemon

Candied Walnuts

*Preheat oven to 300

2 cups walnuts

1 cup sugar

1/2 cup water

Salt

Combine all the above and cook until liqued crystalizes. Spread onto foil lined pan sprayed with non-stick cooking spray. Bake for 15+ minutes.

The Constant Quest July 27, 2010

My husband, Casey, and I have been married for 2 ½ years and we are still trying to figure out what is an appropriate budget. We are constantly altering what we should or should not spend our money on and figuring out how we can save money.  One of my biggest ‘hard pills to swallow’ is buying household cleaners and toiletries.  Why do they have to be so expensive?!  It is very hard walking into Costco and paying 20 plus dollars for detergent! But, I also don’t want to walk around with my clothes all stinky, so I guess I have to submit to the purchase. Until now…

Casey and I traveled back to the Midwest to visit family in the beginning of July. As we were visiting Casey’s brother and his family, the time came when we had to do laundry. Julie (sister in law) said to me, before heading downstairs to commence the process, that the detergent was in a 5 gallon bucket next to the washer and to only use ½ a cup in each load. As I got down to the washer and put the detergent in, I was a little skeptical as to how this homemade detergent was going to work.  But, I kept my mind open and was very grateful to be doing laundry!

When everything was said and done and as I was folding our clothes, I was pleasantly surprised at how clean everything turned out! Ok, I thought, there is something to this.  So I asked for Julie’s recipe for the detergent and when Casey and I returned home, I promptly went on the quest to find all of the ingredients (which, after visiting 8 stores, all of the ingredients are at Fred Meyer).

I am happy to report that, for us, this 5 gallon bucket full of detergent will last us approximately just under a year!  When I crunched the number, I was shocked! We spent about 8 dollars for all of the ingredients and it took us about 15 minutes to put together the mixture. 8 dollars! For a year! That, 100%, beats 20 plus dollars every 3 months or so.

I’m not quite sure where Julie got this recipe but I will be using this for a very long time! I hope you enjoy it and I encourage you to try it.  And just think of all the ways you will be saving money!

Homemade Liquid Laundry Soap

1 bar of Fels-Naptha soap

4 c. hot tap water

1 c. washing soda

1/2 c. Borax

-Grate the bar of soap with a food grater, and add to a saucepan with the hot tap water. Over medium heat, stir until soap is completely dissolved and melted. Fill a 5 gallon bucket (available at Home Depot with lids) 1/2 full with hot tap water. Add melted soap, washing soda, and Borax. Stir well until all powder is dissolved. Fill bucket to the top with hot tap water. Stir well, cover, and let it sit overnight to thicken.

This Laundry soap is basically like a concentrate that you would buy at the store. A little goes a long way! Mix well before each use. (it thickens and gels when it has been sitting) Add 1/4 c. to 1/3 c. per load depending on dirtiness and size of load. I keep a measuring cup on top of the washing machine so I always have it there when I need it! This recipe costs approximately $2.00 to make, and it washes approximately 180 loads of laundry.

Hints:

-Fells Naptha soap, Borax, and Washing Soda are found in the laundry aisle of most grocery stores.

-This is a great recipe for people with sensitive skin. It contains no dyes or fragrances.

-It works great when washing cloth diapers! Just add 2 tbsp. extra of Borax to the laundry load, or pre-treat the stains by dissolving 1/2 of Borax in warm water, and soaking the item that is stained. Works great on baby spit-up, formula stains, newborn diaper messes, ketchup, grass stains, etc.

 
 

Mothering Together at Northshore July 24, 2010

Despite her being a week late, the birth of my firstborn truly changed my entire perspective on the world. I’ve often said that young mothers actually need to walk around with a t-shirt that says, “I do have a brain”, just to reaffirm to others that despite the crazy circumstances we find ourselves in, we do have some intelligence left. God uses these situations to speak to me, sometimes more often than I would like.

When my daughter was 2 and my son was 6 months, she was in the bath tub, while I was cooing to my son on the floor outside the tub. Suddenly I felt something hit my head, being thrown from the tub. Initially thinking it was a toy, I looked down, and realized it was a piece of poop. Hmm…where’s that t-shirt and the candid camera? Humility is something I’ve just started to learn. Things don’t always go as planned, and that’s right where God likes us. Relying on Him.

If any of this seems familiar to you, and you’d like to join the group with the “t-shirts”, we’d love to have you at MOPS. MOPS (Mothers of Preschoolers) is for moms and their kids, age infancy thru Kindergarten. We meet twice a month, in the Student Center. We have snacks (code: uninterrupted time for you to eat your own food), a craft that you can complete in one sitting, and a speaker on various topics pertaining to mothering, marriage, etc. I love being a mother, both from the standpoint that it’s an adventure everyday, and that most days it’s just God and me, making it thru. Favorite parks July 20, 2010

Moms!

Summer is well underway and you might be looking for a few new things to do with your kids this week. Here a few of my favorite new parks and a couple of the old stand-bys. I’d love to hear about your favorite parks too…and I promise not to take your parking spot when we go!

Grass Lawn Park – (Redmond/Kirkland area) – This park is amazing! It was recently re-done…so if you haven’t been since you were in 6th grade (in my case!)…give it another try. It has different play structures for kids of all ages – all visible from one “mommy watch station”.

Kirkland Tot Lot - This is such a sweet, neighborhood park! It is completely fenced, has a great big sandbox (bring your own shovels), swings, and a super fun slide. We have sadly out grown this park…if I went with my kids now I’d be “that mom” of “those big boys” that I didn’t like when my kids were toddlers!

Log Boom Park – (Kenmore) – Biking families will love Log Boom Park on the Burke-Gilman Train in Kenmore. It has some great play equipment for the kids and is a good spot to stop for a water break. It is about 3 miles from Bothell Landing…a perfect ride for the kids!

Willis-Tucker Park (South Everett/Silver Firs Neighborhood) – It’s a water park! Yup…you heard it…there is water! This park has fun splash fountains, a great playground, basketball courts, and even an off-leash dog park (fenced and separated from the play area…of course!) The locals are NOT going to be happy we found out about this one!!!

 
 

Mammograms July 17, 2010

Mammogram.  Just the mere sound of it sparks thoughts of uncertainty throughout all walks of women both young and old.  But for a 34-year-old, when the word is used in a sentence requesting you schedule one – I at least – encountered a whole mashed-up array of feelings.  Of course it’s best to know if there is an actual issue – that makes it easier deal with, but on the other hand, what if I find out there really IS an issue?  I would rather just skip to the part when I find out all is well.

Recalling Lauren’s post on this blog about her experience in the area of mammograms, I was immediately comforted that it is possible to go through many levels of testing and still come through clear.  I remembered reading her post, and was encouraged that I was not alone in this exciting world of being a woman – and all the additional “attention” we endure in this journey.

And there I was changing into the “cape,” wondering why in the world these things weren’t designed a little longer to cover up my love handles.  I wondered if perhaps a new line of designer capes should be introduced.  After all, I couldn’t be the only one who would rather leave my imperfections hidden.

As a woman and as a human I am imperfect.  Plain and simple.  And yet I still don’t like to be exposed for a spiritual diagnostic probing, the probing that the Holy Spirit often works through to address issues in my life – issues that hinder me from healthy spiritual living.  Sometimes I seem to feel it is less painful to ignore my issues than to let my doctor expose them – to invite healing and restoration by the Great Physician.

Yes, I got the “all clear”…after several diagnostic images and ultrasounds…and a longer wait than I desired…and yes, the Great Physician gives me the “all clear” too.  I just need to let Him work.

 The Step by Step organization is in desperate need of newborn baby clothes!!  The shelves are empty!  Step by Step is looking for new, or gently used clothing sized newborn to 3 months, blankets, etc, also a double stroller.    You may bring your donation to church on Wednesday evening at our Women Together gathering, or at church during the week.   We will be collecting items on 7/21 and 7/28.

This is Beth Moore’s blog. She and her daughter post spiritual things, family things, humorous stuff, etc. Great blog for all those Beth Moore lovers out there!

Chances are, if you like Beth Moore, you love her buddy Travis Cottrell and his blog. He doesn’t write a lot, but when he does it is worth the read. Usually funny, sometimes he includes family tidbits, spiritual things, etc. On a side note, the first time I saw Travis Cottrell and Beth Moore live was at Northshore years ago…sweet memory….ok, back to the point…

This is Paul Baloche’s blog. He is a worship leader/songwriter who many will recognize. Love his advice/tidbits on leading worship…totally humble leader.

Cooking Blog Recommendations: by Lauren Neal

I’m a wannabe chef. The only thing holding me back is that I don’t have a true love of cooking. The only thing driving me forward is an intense love of eating. And, there I am stuck in the middle…these blogs help me make it through weeknight dinners…. Bon Appétit!

The Pioneer Woman Don’t be swayed by the name of the blog. I expected a toothless, back-woods, old-lady-in-the-shoe type thing. This could not be further from the truth! She has AMAZING recipes and photography. I highly recommend anything she posts, recipe-wise. She is funny and easy to read. She has a new cookbook out, now, too for those interested.

Gimme Some Oven I’m slightly biased to this one, since its done by a second cousin of mine, but it is fantastic, and every recipe that I’ve tried has been excellent. Great variety in recipe offerings, too.

And, although its not a blog, per se, I highly recommend using the recipe planner Relish! It is $7/mo, and I’ve used it every week for 3 yrs. It has amazing recipes, the ability to enter your own recipes, and then once the weekly menu is chosen, it spits out a super organized grocery list. It is a life saver, for those of us busy women, who like to make great recipes, but don’t have the time to hunt all over the place.

 
 

100 Good Cookies July 10, 2010

This is a great, all-around, cookie recipe.  It’s oatmeal with a lot of fun extras and a great texture…crispy and chewy at the same time.  I remember my friend’s mom making these cookies when I was a kid and I asked my mom to get the recipe.  Turns out, they were from the best source…a church cookbook!  Enjoy!

100 Good Cookies

1 c. sugar

1 c. brown sugar

1 c. butter or margarine, softened

1 c. vegetable oil

1 egg

1 tsp. vanilla

3 ½ c. flour (I sometimes use ½ whole wheat)

1 tsp. salt

1 tsp. cream of tartar

1 tsp. soda

1 c. coconut

1 c. oatmeal

1 c. rice krispies

1 c. chopped nuts (optional)

Preheat oven to 350°.  Cream sugars and butter together until well blended.  Add oil, egg and vanilla and mix well.  Add the dry ingredients, except rice krispies, and blend well.  Add rice krispies and mix gently.  Bake until light brown, about 9-12 minutes.
