Delicious summer recipe July 2, 2009

Warm, sunny days don’t usually inspire me to cook – but my family and I are always starving come dinner time! Here’s a great recipe from my friend Mia for a quick and easy summer meal.

Chicken Peanut Wraps

Peanut Sauce:
¼ cup peanut butter
¼ cup sugar
3 Tblsp. soy sauce
3 Tblsp. water
Crushed garlic to taste
Mix together in sauce pan and heat on low/med until smooth. Keep warm.

Sauté: One chopped onion and rainbow salad (slaw) together and set aside.

Grill (or sauté) boneless chicken – (Chicken breasts, or tenders work really well for this!)

Prepare your favorite rice.

Wrap the ingredients above (rice, veggies, chicken and sauce) in heated flour tortillas! Yummy!

OK-I tried this Tuesday night and it’s fabulous! We used lettuce instead of tortillas and I loved it so much it will be a regular item on my meal list! Really great & fast if you have leftover chicken to use up! Next time I will add some chopped peanuts for a little more crunch!
