Thought for the day July 21, 2009

I heard a wonderful thought from my sister today. A quote actually – “Rejection can be God’s protection”. How often are we in the midst of hurt and pain, thinking that the rejection is awful and how much it hurts. We can allow ourselves to stay there – thinking about how the rejection is affecting us, hurting or hurting us. We can concentrate or dwell on the pain, focusing on ourselves – or. we can turn it around and see things from God’s perspective. He can see the bigger picture – we are only in the moment. Focus on His love and protection, not on ourselves..the situation you are in suddenly seems different!

Just a thought…

Looking for a good book? July 8, 2009

For some reason, summer seems to be such a good time for reading! I have found myself reading more and more these days. I still knit occasionally (lots of baby things – and some fingerless gloves), but the warm afternoons and evenings are perfect times to be outdoors–reading a great book.
One of the books I just finished is “Same Kind of Different As Me: A Modern Day Slave, an International Art Dealer and the Unlikely Woman Who Bound Them Together” by Ron Hall. The story grabbed me in the beginning and I just couldn’t stop reading it! It is packed with emotion – and it’s a true story!!! I am still thinking about this book – it truly blessed my heart. So there you go – a great book. I’ll be adding more books and reviews soon. Do you have a book you would recommend? I’d love to hear about it!

Delicious summer recipe July 2, 2009

Warm, sunny days don’t usually inspire me to cook – but my family and I are always starving come dinner time! Here’s a great recipe from my friend Mia for a quick and easy summer meal.

Chicken Peanut Wraps

Peanut Sauce:
¼ cup peanut butter
¼ cup sugar
3 Tblsp. soy sauce
3 Tblsp. water
Crushed garlic to taste
Mix together in sauce pan and heat on low/med until smooth. Keep warm.

Sauté: One chopped onion and rainbow salad (slaw) together and set aside.

Grill (or sauté) boneless chicken – (Chicken breasts, or tenders work really well for this!)

Prepare your favorite rice.

Wrap the ingredients above (rice, veggies, chicken and sauce) in heated flour tortillas! Yummy!
Enjoy!

Happy 4th of July!
